I love baking! A lot. But I also like to eat healthy so sometimes I am in a dilemma because as much as I like baking pies, pastries, cakes and such, the healthy side of me chides me. So I compromise and have been experimenting on ways to bake healthier.
I mostly research on the net for healthy substitutes for butter and sugar and then experiment in the kitchen to come up tasty treats that are good for the waist line. So, the other day I made a No Sugar, No Butter Banana and Date Cake . It only has 8 ingredients. The natural sugars from the fruit replaces the sugar and while I could use an egg replacer which i normally do, I decided to use an egg.
12/100gm pitted dates
4 ripe bananas
150gm wholemeal flour
1 heaped teaspoon baking powder
2 teaspoons mixed spice
100ml sunflower oil
vanilla essence (optional)
1) add the bananas, dates, raisins, sunflower oil, mixed spice and vanilla essence in a food processor and blend until smooth. It will become a thick creamy paste.
2) Put it into a large bowl and stir in the beaten egg, wholemeal flour and baking powder
3) Pour the mixture into a large (900ml) lightly oiled loaf tin and sprinkle the top with sunflower seeds.
4) Bake in a preheated oven at 180 degree Celsius for 15min. Place some foil on the top and bake further for 30-40 min
The result? A nice dense cake rich in banana flavor complemented with the sweetness of the dates and raisins. It’s not your typical super sweet cake but if you are into healthy treats, this will do it for you.
Perfect snack for mid day. Drink with tea or coffee.
